Preparation steps

Wash, trim and roughly shred the cabbage. Peel and chop the onion. Heat 2 tablespoons oil and saute the onion until soft, then add the cabbage and saute briefly.

Add the broth, bay leaves and thyme. Season with salt and pepper, cover and cook over a medium heat for about 15 minutes. Wash and halve the tomatoes.

Rinse the beans in a sieve and drain. Add the beans and tomatoes to the soup and simmer over a low heat for a further 15 minutes. Peel and roughly chop the garlic, then crush in a mortar with 1 teaspoon salt, gradually working in the rest of the olive oil. Stir the garlic oil into the soup. Check the seasoning and serve hot.
