9 large egg yolks
¾ cup granulated sugar (plus 1 tablespoon)

3 cups heavy cream
3 cups milk
10 cups Challah (cut into 3/4-inch cubes, lightly baked)
1 ½ cups raisins
2 Tbsps unsalted butter (melted)
2 Tbsps light brown sugar

Preparation steps

Preheat oven to 325° F/ 160° C.

Whisk the egg yolks, 3/4 cup sugar, 1/8 teaspoon cinnamon, vanilla, and salt together in a large bowl. Add in the heavy cream and milk and continue to whisk until well combined.

Add the cubed bread and raisins into the liquid and mix together until bread is thoroughly soaked. Transfer to a baking dish and let stand for about 30 minutes, occasionally pressing the bread down for thorough soaking.

In a small bowl mix the brown sugar, 1 tablespoon granulated sugar, and 1/8 teaspoon cinnamon together. Dab the melted butter onto the surface of the bread pudding and sprinkle the cinnamon-sugar mixture over the top.
5.
Bake for about 45-50 minutes or until liquid does not ooze when you push down on the bread pudding. Let cool for at least 30 minutes before cutting.
