- ¼ cup butter
- 8 slices day-old white bread
- 6 Tbsps Orange marmalade
- ⅞ cup milk
- 1 tsp vanilla extract
- 3 eggs
- 2 Tbsps sugar
- ⅜ cup cream (48% fat)
- 1 Tbsp brown sugar

Preparation steps
1.
Lightly butter a 1 litre|2 pint pie or baking dish.
2.
Spread the butter on 1 side of each slice of bread, followed by the marmalade and slice diagonally in half.
3.
Layer the bread, marmalade-side up, in the base of the dish.
4.
Whisk together the milk, vanilla, eggs, sugar and cream. Strain a little more than half over the bread and leave to stand for 20 minutes.
5.
Heat the oven to 180°C (160° fan) 350°F gas 4.
6.
Sprinkle the top of the pudding with demerara sugar.
7.
Place the dish in a roasting tin. Pour in enough hot water to come halfway up the sides of the baking dish and bake for 30-40 minutes until golden brown. Allow to stand for 10 minutes before serving.
