- 1 Guinea fowl (approximately 1.4 kg)
- 4 Tbsps Marsala wine
- 12 slices air-dried Prosciutto
- 4 Tbsps butter
- 4 thyme
- 4 Sage
- 1 rosemary
- salt
- freshly ground peppers
Preparation steps

Rinse guinea fowl, pat dry and cut into quarters. Drizzle with Marsala and let stand for about 1 hour. Season with salt and pepper and brush with melted butter. Pluck herbs and finely chop. Sprinkle herbs over meat and wrap each quarter with 3 slices of prosciutto. Brush again with butter and place in cold braising containers with water. Braise at 180°C (approximately 350°F) for about 1.5 hours. Turn off heat and let stand for 15 minutes in oven.

Serve over eggplant if desired.
