- 800 grams Beef (for braising, from the leg)
- 2 onions
- 1 garlic clove
- 2 carrots
- 200 grams starchy potatoes
- 1 Red Bell pepper
- 50 grams Bacon (sliced)
- 4 Tbsps vegetable oil
- salt
- freshly ground peppers
- 200 milliliters Red wine
- 200 milliliters Beef broth
- 1 Culinary herbs (3-4 stalks of thyme and 2 bay leaves)
- 1 Tbsp freshly cut parsley
Preparation steps

Rinse beef, pat dry and cut into bite-sized cubes. Rinse or peel the onions, garlic, carrots, potatoes and bell pepper and and cut into cubes, slices or strips. Cut the bacon into wide strips.

Heat oil in a Dutch oven. Add the meat in portions and sear. Season with salt and pepper and remove from the Dutch oven.

Then fry all vegetables (except potatoes) with bacon in the Dutch oven for 2-3 minutes and deglaze with the red wine. Add meat and potatoes and pour in some broth. Cover and simmer about 1.5 hours. If necessary pour in a little broth and stir occasionally. After about 1 hour add the fresh herbs to the pot.

Season with salt and pepper and serve sprinkled with parsley.
