- ½ cup butter
- 2 Tbsps Cider vinegar
- 1 ⅓ cups light corn syrup
- 1 ¾ cups caster sugar
- ½ tsp baking soda

Preparation steps
1.
Grease a 20cm|8" square baking tin and line the base with non-stick baking paper.
2.
Melt the butter in a large heavy-based pan over a low heat.
3.
Add the vinegar, syrup and sugar and heat, stirring, until the sugar has dissolved.
4.
Increase the heat and cook without stirring until a little of the mixture forms a hard crack when dropped into chilled water;154°C|310°F on a sugar thermometer.
5.
Remove from the heat and immediately stir in the bicarbonate of soda. When the mixture begins to forth, stir, then pour into the tin and leave to cool for 30 minutes.
6.
Mark into squares and leave to set. Break into squares to serve.
