- 1 ½ cups all-purpose flour
- ¾ tsp Baking powder
- ¼ tsp baking soda
- ½ cup rolled oats
- 0.167 cup caster sugar
- 1 egg
- 1 Tbsp clear honey
- ⅜ cup Buttermilk
- ⅛ cup sunflower oil
- ½ tsp vanilla extract
- ½ cup Blueberries
- For the crumble topping
- ¼ cup plain flour
- 0.167 cup Almond flour
- 2 Tbsps sugar
- ¼ cup butter

Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Place paper cases in 6 muffin tins.
2.
Sift together the flour, baking powder and bicarbonate of soda into a mixing bowl. Stir in the rolled oats and sugar.

Whisk together the egg and honey until smooth. Add the buttermilk, oil and vanilla and whisk until blended.
4.
Add to the flour mixture and mix until just combined. The mixture will be lumpy. Fold in the blueberries.
5.
Spoon into the paper cases.

For the crumble topping: mix together the topping ingredients with your hands to form a crumble. Sprinkle the crumble on top of the cake mixture.
7.
Bake for about 20 minutes, until risen and golden. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.
