- For the toasts
- 1 large Pear
- 1 oz Walnut
- 7 ozs Roquefort cheese (or gorgonzola/blue cheese)
- 7 ozs Cottage cheese
- 8 slices Farmhouse bread (or whole grain)
- freshly ground peppers

Preparation steps
1.
For the toasts: Rinse the pear, cut into quarters, core and thinly slice. Chop the walnuts. Mash the Roquefort with a fork, mix in the cottage cheese and walnuts and spread over the bread.
2.
Arrange the pear slices over the cheese, season with pepper and serve garnished with thyme and pansy flowers.
