- For the dough
- 1 ½ tsps Dried yeast
- 1 tsp sugar
- ½ cup lukewarm milk
- 3 ⅓ cups flour
- ⅜ cup olive oil
- 1 tsp salt
- For the topping
- 5 cups large, firm Pear (drained and diced)
- 1 ⅔ cups Roquefort cheese (diced)
- 1 cup Walnut (chopped)

Preparation steps
1.
Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4 and grease a baking tray with olive oil.
2.
To make the dough, dissolve the yeast and sugar in the milk. Mix together the flour, olive oil and salt and add the yeast-milk mixture. Using and electric mixer with dough hooks, knead everything together to form a smooth dough. The dough should not be sticky. Cover and allow rise in a warm place for approx. 45 minutes.

On a floured work surface re-knead the dough and then roll it out onto the greased baking tray.

Scatter the pears, cheese and walnuts on top of the pastry and leave to rise for a further 15 minutes.
5.
Bake for 45 minutes. Remove from the oven and leave to cool. Cut into slices and serve lukewarm or cold.
