- 1 ½ sheets clear gelatin (3 grams)
- 200 grams Fructose
- 20 grams black Tea
- 25 grams mint
- 125 milliliters lemon juice
- 100 grams Whipped cream
- 2 Tbsps Rum

Preparation steps

Soften the gelatin in a bowl of cold water, about 10 minutes. Combine 500 ml (approximately 2 cups) water with sugar and bring to a boil. Remove from heat. Stir in tea and mint leaves. Cover and let infuse about 10 minutes. Strain mixture through a sieve. Squeeze gelatin and stir into mixture, along with lemon juice.

When mixture is cool, stir in cream and rum. Pour into a shallow metal container and freeze. Stir mixture with a fork during the first hour of freezing to prevent large ice crystals from forming.
