Ingredients

For the meringue
5 egg whites
1.333 cups caster sugar (superfine)
1 tsp Vinegar
1 tsp vanilla extract
2 tsps Corn starch
3 Tbsps slivered almonds
cup Greek yogurt
3.333 cups mixed Berry (strawberries, blackberries, raspberries)
2 Tbsps powdered sugar

Preparation steps

1.
Heat the oven to 150C (140C fan ) 300F, gas 2.
2.
Beat the egg whites until stiff using a mixer on the highest setting.
3.
Gradually add the sugar. Reduce the speed and gradually add the vinegar, vanilla extract and cornflour.
4.
Line a baking sheet with non stick baking paper or a teflon sheet.
5.
Spoon the meringue mixture onto the prepared tray and form into a circle approx. 28 cm/ 11 inch diameter with a depression in the middle.
6.
Sprinkle the almonds over the sides and bake for 45 minutes.
7.
Allow to cool completely in the oven.
8.
Transfer the meringue pavlova onto a serving dish.
9.
Spoon in the Greek yogurt.
10.
Pile the berries on top of the cream and serve dusted with sugar.
