- 400 grams Beets
- ½ stalk cinnamon
- ½ tsp fennel seeds
- ½ stalk Licorice
- salt
- 100 grams sugar
- 150 milliliters Orange juice
- 75 milliliters dark balsamic vinegar
- freshly ground peppers

Preparation steps

Scrub beetroots, place in a small saucepan and just cover with water. Add cinnamon stick with fennel seeds, licorice and 1/2 teaspoon of salt and bring to the boil. Simmer for 45-60 minutes on medium heat. Rinse and peel beetroots. Halve beetroots lengthwise.

In a pan, caramelize sugar and add orange juice and vinegar. Season with salt and pepper and simmer until sauce thickens. Remove from heat and cool. Add beetroot halves to the syrup, toss and arrange on plates. Serve.
