- For the salad
- 400 grams Beets (small)
- 200 grams lamb's lettuce
- 4 small Oranges
- 2 Red onions
- For the dressing
- 1 scallion
- 50 milliliters Vegetable broth (hot)
- 50 milliliters White vinegar
- 50 milliliters olive oil
- salt

Preparation steps

For the salad, peel beet, cut into thin slices and blanch in a pot of boiling salted water for 2-3 minutes, drain, rinse with cold water and drain again. Rinse lettuce thoroughly, trim and shake dry. Peel oranges and cut into thin slices. Peel onions, cut in half and then cut into strips.

For the dressing, rinse scallions, trim and cut into thin rings. Mix scallions in a bowl with hot broth, set aside and let cool. Add oil and vinegar to the bowl, whisk and season with salt and pepper. Arrange lettuce, beet and oranges on plates, cover with dressing and sprinkle with onions.
