- 2 bay leaves
- 1 tsp instant Vegetable broth
- 1 small Celery root
- 1 stalk Leeks
- 3 carrots
- 2 Tbsps sunflower oil

Preparation steps

Cut beef into cubes. Bring 1.5-2 liters (approximately 51-68 ounces) of water to a boil in a pressure cooker and add beef. Season with salt and pepper, add bay leaves and stir in a little broth. Cook beef in the closed pressure cooker for about 15-20 minutes. Meanwhile, peel celery, trim leek and peel carrots. Cut everything into fine julienne strips. Heat oil in a pan and sauté vegetables for 2-3 minutes.

Gently open the pressure cooker. Remove bay leaves. Add vegetables and cook for about 5 minutes and season to taste. Rinse parsley, pluck leaves from stem and coarsely chop. To serve, pour soup into warmed plates and garnish with parsley.
