- 600 milliliters Beef broth
- 100 milliliters Whipped cream
- 200 grams Polenta
- 50 grams fresh Parmesan
- 250 grams Corn (canned, drained)
- salt
- freshly ground peppers
- 4 slices Beef fillet (ready to cook, about 150 grams or 5 oz)
- 120 grams butter
- 12 Sage
- Sage (for garnish)

Preparation steps
1.
Bring the broth and cream to a boil, add the polenta and simmer for about 5 minutes over low heat. Set aside and let soak for about 15 minutes, stirring regularly. Mix in the parmesan and corn. Season with salt and pepper.

Rinse the meat, pat dry and season with salt and pepper and grill (longer or shorter depending on your preference) on each side for about 2 minutes.
3.
In a pan, heat the butter and allow to brown slightly. Remove from heat and fry 12 sage leaves in it until crisp.
4.
Spoon the polenta onto warmed plates, arrange the meat on top and top with sage butter. Serve garnished with fresh sage leaves.
