- 500 grams fresh, green Asparagus
- salt
- 20 Cherry tomatoes
- 2 Red onions
- 600 grams Beef fillet (ready to cook)
- 30 grams clarified butter
- freshly ground peppers
- 20 grams butter
- Herb butter (for serving)
- Chervil (for garnishing)

Preparation steps

Rinse asparagus, peel bottom thirds and cut off woody ends. Cook in boiling salted water for 4-5 minutes. Drain, rinse in cold water and drain again.

Rinse tomatoes. Peel onions and cut into thin strips. Rinse and pat dry meat, trim and cut into 4 slices. Heat butter in a pan and brown meat on all sides on high heat. Season with salt and pepper and bake in preheated oven at 120°C (approximately 250°F) for about 30-40 minutes (depending on desired doneness).

Place asparagus in the pan and saute, stirring. Add tomatoes and onions. Add butter and let it foam. Arrange asparagus in a lattice pattern on plates, top with a slice of beef fillet and garnish with onions and some garlic butter. Arrange tomatoes around and garnish with parsley. Serve.
