1 onion
35 grams butter
35 grams Pastry flour
½ l milk
1 Tbsp granular Meat stock
1 sprig thyme
salt

Preparation steps

1.

Peel and finely dice the onion. Melt 30 g (approximately 1 ounce) of butter in a pan until frothy. 

2.

Add the flour, mix until combined, then sauté over low heat for 5 minutes. 

3.

Gradually incorporate the cold milk, stirring constantly. Mix in the granulated broth, then bring to a boil. 

4.

Rinse the thyme, pat dry, and remove the leaves from the stems. 

5.

Sauté the onion in the remaining butter. Add the thyme, then season with salt, pepper, and nutmeg. Mix in the sauce, cover, and simmer for 45 minutes. Pass the finished sauce through a fine strainer, and season to taste. This sauce will go well with white meats such as fish or poultry, or with vegetables.
