- For the salad
- 200 grams Brown rice
- 180 grams Barley (pearl)
- salt
- 2 sour Apple (such as Granny Smith)
- lemon juice
- 1 bunch Arugula
- 1 stalk Celery
- 1 Red onion
- 3 Tbsps freshly chopped parsley
- For the dressing
- 6 Tbsps Hummus
- 6 Tbsps Natural yogurt
- 1 untreated lemon (juiced)
- 1 Tbsp honey
- salt
- freshly ground peppers
- 1 Tbsp freshly chopped cilantro
- also
- 120 grams Goat cheese (crumbled)
Preparation steps

For the salad, combine the rice with barley and cook in boiling salted water for about 25 minutes.

Meanwhile, rinse the apples, quarter, remove cores, cut 1 apple into small cubes and 1 apple into narrow slices. Mix both with lemon juice.

Rinse the arugula, trim and spin dry. Rinse celery, trim and cut into small cubes. Peel the onion and cut into small cubes.

Drain and cool the rice and barley. Mix with the diced apples, celery, parsley and onion.

For the dressing, mix all ingredients together and season with salt and pepper. Divide the salad among plates and top with the arugula. Sprinkle on the cheese and the apple slices and serve drizzled with the dressing.
