- For the dough
- 2 Tbsps Yeast
- 2 ⅔ cups all-purpose flour
- 1 tsp salt
- 2 Tbsps olive oil
- all-purpose flour (for the work surface)
- For the topping
- ½ cup raisins
- 10 cups fresh Spinach
- 4 scallions (cut into fine rings)
- 3 Tbsps olive oil
- 3 Tbsps Pine nuts

Preparation steps

Dissolve the yeast in 175 ml warm water. Mix the flour and salt in a bowl and create a well in the middle. Pour in the yeast mixture and the oil and knead into a smooth dough. Knead well on a floured work surface for around 10 minutes, if necessary add some more water or flour. Cover and leave to rise in a warm place for 1 hour.

Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7 and grease a baking tray with oil.

Soften the raisins in warm water and blanche the spinach in boiling salt water. Drain, quench, wring out and chop.

Re-knead the dough and roll out to fit the baking tray. Place on the baking tray and brush with oil. Top with the spinach, raisins, spring onions and pine nuts and season with salt and ground black pepper. Drizzle with oil and bake for around 20 minutes until golden brown. Remove from the oven and serve.
