3 cups frozen Cheese tortellini
3 cups frozen Broccoli (thawed)
1 large Red pepper (rinsed; trimmed and cut into strips)
1 large onion (peeled and sliced)
For Sauce
1 clove garlic cloves (peeled and minced)
2 Tbsps butter
2 Tbsps flour
salt (to taste)
freshly ground Black pepper (to taste)
1 pinch ground Nutmeg
1 cup milk
½ cup grated Parmesan (divided)

Preparation steps

Preheat oven to 350º F. Lightly grease a 2-quart ovenproof casserole dish.

Cook the tortellini in salted boiling water per package instructions. Drain thoroughly and cool slightly.

In a large bowl, combine cooked tortellini, thawed broccoli, red pepper strips and sliced onion; set aside.

In a large saucepan, saute garlic in butter until fragrant, about 1 minute. Stir in flour to make a roux. Season with salt, pepper and nutmeg. Slowly stir in milk until blended. Bring to a boil and cook for 2 minutes or until thickened, stirring constantly. Remove from heat source; stir in 1/2 of the Parmesan cheese. Gently fold in the tortellini and broccoli mixture.

Transfer mixture to prepared casserole dish. Cover and bake, stirring twice for 35 to 40 minutes or until hot and bubbly. Remove from oven, sprinkle with remaining cheese and let stand for about 5 minutes. Serve.
