Baked Pasta with Broccoli, Cheese and Sausage

- 400 grams Penne
- 4 Sausage
- 400 grams Broccoli
- 400 grams ripe tomatoes
- 2 garlic cloves
- 2 Tbsps olive oil
- 100 milliliters Vegetable broth
- 1 tsp dried oregano
- butter (for greasing)
- 1 ball Mozzarella (about 125 g or .25 pounds)
Preheat oven to 200°C (approximately 400°F).
Precook penne in boiling salted water for about 8 minutes. Rinse with cold water and drain well.
Cook sausages in a hot pan with oil until golden brown. Take sausages out and cut into bite-size pieces.
Rinse broccoli, chop and blanch for 4 minutes in boiling salted water. Rinse with cold water and drain well.
Blanch tomatoes, peel, quarter and cut into small cubes.
Peel garlic, chop finely and saute in a hot pan with oil. Add diced tomatoes, broth and season with salt, pepper and oregano. Simmer for about 5 minutes over medium heat.
Mix in noodles, broccoli and sausages. Pour into buttered baking dish and top with fresh mozzarella. Bake for 20-25 minutes. Serve hot.
