1 onion
70 grams Pine nuts
2 Tbsps olive oil
50 milliliters Vegetable broth
3 Tbsps White vinegar
freshly ground peppers
70 grams fresh grated Parmesan

Preparation steps

1.

Cook the pasta in plenty of boiling salted water until al dente. Rinse the broccoli and cook in the same water for 5 to 6 minutes. Drain the pasta and the broccoli.

Peel and dice the onion. Toast the pine nuts in a dry pan until golden. Remove the nuts from the pan. Add the oil and sauté the onion until translucent. Deglaze with vegetable stock. Bring to a simmer and let reduce slightly.

3.

Add the pasta, broccoli, vinegar and pine nuts to the pan, season with salt and pepper and toss to combine. Add the cheese and serve.
