- 200 grams fresh baby Spinach
- 16 slices Bacon
- 3 Tbsps olive oil
- 100 grams blanched Pine nuts
- 1 Tbsp dark balsamic vinegar
- 200 grams Tête de Moine cheese

Preparation steps

Sort the spinach, rinse and shake dry. Fry the bacon in a hot pan with 1 tablespoon olive oil until crispy. Mix the remaining olive oil with the balsamic vinegar.
Toast the pine nuts in a dry pan until golden yellow, remove from the pan and set aside.

Spread the crispy bacon slices on plate, place the spinach over it, sprinkle with pine nuts and drizzle with a little oil and balsamic vinegar mixture. Cut the Tête de Moine cheese using a Girolle scrape into rosettes and place over the spinach. Serve seasoned with pepper.
