- 10 grams fresh Yeast
- 75 milliliters room temperature milk
- 175 grams Pastry flour
- 50 grams softened butter
- 1 pinch salt
- butter (for the mold)
- 2 sticks Leeks
- 200 grams fatty Smoked bacon (in slices)
- 400 milliliters Whipped cream
- 4 eggs
- 50 grams freshly grated Gruyere
- freshly ground peppers
- Nutmeg

Preparation steps
1.
For the dough, mix the yeast with the milk until smooth. Add the flour, butter and salt, and knead into a smooth dough. Add a little more milk if needed. Cover and let rise for about 30 minutes.

Preheat the oven to 200°C (approximately 400°F) and grease the quiche dish with butter.

Roll out the dough, then line the base and sides of the baking dish.

For the filling, rinse the leek and cut into rings. Layer over the base of the dough with half the bacon. Mix the cream with the eggs and the cheese, and season with salt, pepper and nutmeg. Pour over the base, and top with the remaining slices of bacon. Bake in the oven until golden brown, about 40 minutes.
