Ingredients

For the Pastry
1 ¼ cups flour
½ cup butter
1 egg
1 tsp salt
For the Filling
3 eggs
cup milk
¾ cup cream
salt (to taste)
freshly ground peppers
1 pinch freshly grated Nutmeg
½ cup Gruyere (grated)
1 small Leek (washed; trimmed and diced)
4 sprigs fresh Sage chopped (plus extra leaves for garnish)
1 ½ cups smoked, cooked Bacon (crumbled)

Preparation steps

In a mixing bowl, combine flour, butter, egg and salt together. Knead dough until smooth. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat oven to 400º F.

Roll the pastry out very thinly between 2 sheets of plastic wrap. Line the bottom and sides of a 10-inch fluted quiche or tart pan.

Beat the eggs. In a large bowl, combine the eggs, milk, cream, salt, pepper, nutmeg, cheese, leek, sage and bacon. Pour mixture into the pastry shell.
5.
Bake in the oven for 40 to 45 minutes, or until the eggs have set and the top is golden brown. Let cool for 10 minutes. Garnish with fresh sage. Slice and serve warm or cold.
