- For salad
- 2 sun-dried Tomatoes
- 1 large ripe Avocado
- 1 Tbsp lemon juice
- Lettuce
- 2 Tbsps olive oil
- 2 Tbsps lemon juice
- salt
- peppers
- 1 hard-boiled egg
- 1 Tbsp grated Parmesan
- For dressing
- 100 grams Yogurt (0.1% fat)
- 2 tsps balsamic vinegar
- salt
- freshly ground peppers
- 1 green Pepperoncini

Preparation steps

Mix together the yogurt, vinegar, salt and pepper. Rinse pepperoncini, slit lengthwise, remove the seeds, chop and sprinkle on yogurt mixture.

Halve avocado, peel, remove the core and chop, immediately sprinkle with lemon juice.

Drain tomatoes and cut into strips.

For salad, mix together oil, lemon juice, salt and pepper for a vinaigrette. Rinse lettuce, pat dry and lay a bowl. Mix together avocado and tomato, toss with vinaigrette and arrange on the lettuce leaves. Peel egg, cut into eighths and place around the salad, sprinkle with Parmesan and serve with the yogurt dressing on the side.
