Preparation steps

Soften the gelatin in cold water. Peel the ginger and chop. Cut the vanilla bean in half lengthwise and scrape out the seeds. Boil the cream and sugar with the scraped vanilla bean and ginger. Simmer gently for about 10 minutes. Then remove from the heat and pour through a sieve. Squeeze the gelatin well and stir into the cream until dissolved. Pour the mixture into 4 cold ramekins rinsed with water (each about 150 ml (approximately 2/3 cup). Allow to cool cover, and refrigerate at least 4 hours.

Rinse the apple, cut into quarters, remove the core and cut into bite-sized pieces. Mix with the lemon juice in a bowl, then thread onto wooden skewers. To serve, loosen the edges of the panna cotta with a sharp knife. Dip the ramekins briefly in hot water, then unmold the panna cotta onto plates. Serve with the apple skewers and garnish with dried apple pieces and candied ginger, if desired.
