- 8 Asparagus (spears)
- 4 country Loaves of bread (or sourdough)
- ½ cup dairy-free cream cheese
- 1 cup Arugula
- 2 Tbsps extra virgin olive oil
- 1 Tbsp flat-leaf parsley (finely chopped)
- 1 Tbsp Chervil (chopped)
- salt
- freshly ground Black pepper

Preparation steps
1.
Preheat the grill to hot. Blanch the asparagus in a large saucepan of salted, boiling water for 3 minutes. Drain and refresh in iced water.
2.
Toast the slices of bread under the grill for 1 minute on both sides. Remove and leave to cool slightly before spreading with cream cheese.
3.
Top with the asparagus and rocket. Drizzle with olive oil and sprinkle with chopped herbs and seasoning before serving.
