1 ½ liters Chicken broth
400 grams peeled, deviened crayfish
200 grams ground pork
2 minced garlic cloves
1 Tbsp soy sauce
1 Tbsp minced Coriander
200 grams Snow peas
80 grams dried Morel
100 grams Peas
250 grams white Asparagus (may be canned)
salt
freshly ground peppers
Fish sauce (prepared)

Preparation steps

1.

Soak morels in lukewarm water for 15 minutes. Bring chicken broth to a boil. Mix ground pork with garlic, soy sauce, cilantro, salt and pepper. Shape into small dumplings. Peel and trim asparagus. Boil in salted water for 8 minutes. Plunge in ice water and drain.

Add snow peas, peas and drained morels to boiling broth. Boil for 4 minutes. Reduce to a simmer, add dumplings, asparagus and crayfish. Cook for 3 minutes. Season with fish sauce and serve immediately.
