- 1 ½ liters Chicken broth
- 400 grams peeled, deviened crayfish
- 200 grams ground pork
- 2 minced garlic cloves
- 1 Tbsp soy sauce
- 1 Tbsp minced Coriander
- 200 grams Snow peas
- 80 grams dried Morel
- 100 grams Peas
- 250 grams white Asparagus (may be canned)
- salt
- freshly ground peppers
- Fish sauce (prepared)

Preparation steps
1.
Soak morels in lukewarm water for 15 minutes. Bring chicken broth to a boil. Mix ground pork with garlic, soy sauce, cilantro, salt and pepper. Shape into small dumplings. Peel and trim asparagus. Boil in salted water for 8 minutes. Plunge in ice water and drain.

Add snow peas, peas and drained morels to boiling broth. Boil for 4 minutes. Reduce to a simmer, add dumplings, asparagus and crayfish. Cook for 3 minutes. Season with fish sauce and serve immediately.
