- 1 tsp ginger
- 250 grams deveined shrimp
- 1 Tbsp sesame oil
- 1 Tbsp Curry powder
- 400 milliliters Coconut milk (unsweetened)
- salt
- freshly ground peppers
- cilantro (for garnish)
- 400 grams Egg noodle

Preparation steps
1.
Rinse scallions and slice on the diagonal into thin rings.
2.
Heat oil in a saucepan, then sauté scallions, ginger and shrimp. Sprinkle with curry powder and add coconut milk, then bring to a boil and simmer for 5 minutes. Season with salt and pepper.
3.
Meanwhile, cook noodles according to package instructions.
4.
Mix sauce with cooked noodles, arrange on plates and serve garnished with cilantro.
