- 75 milliliters Whipped cream
- 150 grams Lemon yogurt
- ½ bunch mint
- 2 Tbsps sugar
- mint (for garnish)

Preparation steps

Rinse the apricots, pat dry, cut in half, remove pits and cut into very thin slices. Place in a single layer on a large plate. Whip the cream until stiff, fold into the lemon yogurt and chill.

Rinse the mint, shake dry, pluck the leaves, chop coarsely and combine with the sugar in a mortar and pestle. Crush into a mint sugar. Sprinkle the mint sugar in a decorative strip on the apricots and let stand for about 30 minutes at room temperature. Garnish with whipped cream, mint, and an apricot.
