- 1 Tbsp vegetable oil
- 1 Tbsp sugar
- 250 milliliters Apple juice
- 600 grams Sauerkraut
- 4 Guinea fowl breast fillets (each about 160 grams)
- salt
- freshly ground peppers
- 1 Tbsp clarified butter

Preparation steps

Peel the onion, finely chop and sweat in hot oil until tender, then add the sugar and caramelize over medium heat while stirring. Pour in the apple juice, stir in the sauerkraut and cook for about 20 minutes, covered over low heat.

Season the guinea fowl breasts with salt and pepper. Heat the clarified butter in a ovenproof pan. Brown the guinea fowl breasts on the skin side, turn and cook in an oven preheated to 200°C (approximately 375°F) about 8 minutes until done.

To serve, cut the guinea fowl breasts diagonally into slices. Spread the sauerkraut on a plate and arrange the guinea fowl breasts on top. Serve with parsley potatoes.
