For the cupcakes
½ cup butter
½ cup superfine caster sugar
2 large eggs
1 cup all-purpose flour (heaped)
1 tsp Baking powder
½ tsp baking soda
1 tsp ground cinnamon
1 large, red Apple (thinly sliced)
For the buttercream
½ cup unsalted butter
2 ¼ cups powdered sugar
1 tsp ground cinnamon
To decorate
1 large, red Apple (thinly sliced)
3 Tbsps Maple syrup

Preparation steps

1.
For the cupcakes: heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in 12 bun tins.
2.
Beat the butter and sugar in a mixing bowl until light and fluffy.
3.
Add the eggs, one at a time, beating thoroughly after each addition.

Fold in the flour, baking powder, bicarbonate of soda and cinnamon until just combined. Gently stir in the apples.
5.
Spoon into the paper cases and bake for 20-25 minutes until risen and golden. Place on a wire rack to cool completely.
6.
Place 2-3 apple slices on each cake.
7.
For the buttercream: beat the butter until soft. Sift in the icing sugar and cinnamon and beat until light and fluffy.
8.
Spoon into a piping bag and pipe a whirl on each cake. Drizzle with maple syrup.
