- 1 ½ cups all-purpose flour (plus extra for dusting)
- 1 Tbsp sugar
- ½ tsp Baking powder
- ¼ tsp salt
- 2 Tbsps Lard (or vegetable shortening)
- 1 egg
- 3 Tbsps Marsala wine
- vegetable oil (for frying)
- To decorate
- warmed honey
- colored sugar sprinkles

Preparation steps
1.
Sift the flour, sugar, baking powder and salt into a mixing bowl. Rub in the lard until the mixture resembles breadcrumbs.

Beat together the egg and wine and pour into the flour mixture. Mix to a dough.

Turn out onto a floured surface and knead for a few minutes until smooth. Wrap in cling film and chill for 1 hour.

Divide the dough into 4 pieces. Cover 3 pieces and roll out 1 piece very thinly on a lightly floured surface. Cut into strips about 5cm x 10cm|2" x 4" with a fluted pastry wheel. Repeat with the remaining dough.
5.
Heat the oil in a deep heavy-based pan, about 8cm|3" deep and fry the pastry strips, a few at a time, turning once, for 40-50 seconds on each side until crisp and golden. Drain on absorbent kitchen paper.
6.
Brush about half of each pastry with a little honey and sprinkle with the sugar sprinkles.
