- 3 drops Bitter almond oil
- 300 grams sugar

Preparation steps
1.
Beat the egg whites until stiff. Mix the almonds with almond oil and sugar, and fold into the egg whites.
2.
Place several walnut-sized piles of the egg white mixture on a baking sheet lined with parchment paper. Press the piles a little flat. There should be some distance between the piles as they will flatten while baking.
3.
Bake in a preheated oven at 160°C (fan: 140°C, gas mark 2) (approximately 320°F) for about 25 minutes.
Take out the baking sheet from the oven, put the baked amaretti on a wire rack and let cool.
4.
Serve as desired with espresso.
