- 4 leaves gelatin
- 18 ozs Wild Strawberries
- 2 Tbsps lemon juice
- ⅓ cup sugar
- 1 cup Greek yogurt
- 1 ¼ cups cream (38% fat)
- To decorate
- Wild Strawberries
- diced Watermelon
- mint

Preparation steps
1.
Soak the gelatine leaves in a small bowl of cold water.
2.
Place the strawberries and lemon juice in a food processor or blender and blend until smooth.
3.
Put into a pan and stir in the sugar. Heat gently until the sugar dissolves. Remove from the heat.
4.
Squeeze the excess water from the soaked gelatine leaves and add to the strawberry mixture. Stir well until dissolved, then set aside to cool.
5.
Whisk the yoghurt into the strawberry mixture.
6.
Whisk the cream until thick and fold into the strawberry mixture until blended.
7.
Spoon into serving glasses and chill for 2 hours. Decorate with wild strawberries, diced watermelon and mint leaves.
