- 200 grams Beef fillet
- 200 grams Veal fillet
- 200 grams Pork tenderloin
- 4 slices Veal kidney (about 50 g)
- 4 slices Calf's liver (about 50 g)
- 4 slices Sweetbread (about 50 g)
- 2 Tbsps butter
- 4 Chipolata sausages
- 4 slices Bacon
- 1 Tbsp fresh marjoram
- 4 Sage
- 500 grams cooked Sweet potato
- 1 onion
- 2 Tbsps vegetable oil
- salt
- freshly ground peppers

Preparation steps
1.
Peel carrot, cut into sticks and blanch in a pot of boiling salted water for about 2 minutes. Drain and rinse under cold water.

Rinse beef and veal fillets, pat dry and cut each into 4 slices. Sauté in hot butter on both sides. Remove from the pan, season with salt and pepper and place in oven at 80°C (approximately 175°F) until slightly pink in the center.

Saute the sausage with the bacon until golden brown.

Peel the onion and cut into strips.
5.
Peel the potatoes, cut into slices and saute with the onion in hot oil about 4 minutes. until golden brown. Season with marjoram, chopped sage, salt and pepper and arrange on a plate. Place meat, sausages, bacon and offal on it and serve as desired with peas and carrots.
