- 2 eggs
- 1 pinch salt
- 150 grams Pastry flour
- 300 milliliters milk
- 4 Tbsps Lard
- 8 small Soufflé dishes
- 100 grams Crème fraiche
- Roast beef
- 1 scallion (chopped)

Preparation steps
1.
Mix eggs, salt, flour and milk together with an electric hand mixer until a smooth dough forms. Let stand briefly.
2.
Grease ramekins with lard and place in a hot oven at 250°C (approximately 475°F).
3.
Remove ramekins from oven, stir dough briefly and pour into ramekins as thinly as possible. Bake for 12 minutes or until dough has risen and appears crisp. Do not open oven while pudding cooks. Remove and slightly cool.
4.
Remove Yorkshire pudding from ramekins and cool completely. To serve, place each next to a piece of roast beef and top with a dollop of creme fraiche. Sprinkle with scallion and serve.
