- 1 ½ Tbsps olive oil
- 4 cups cooked, golden Beets (roughly chopped)
- 8 ozs reduced-fat Halloumi cheese (cubed)
- 4 cups mixed-leaf salad
- 1 Tbsp extra virgin olive oil
- 2 Tbsps lemon juice
- salt
- freshly ground Black pepper

Preparation steps
1.
Preheat the oven to 190°C (170° fan) | 375F | gas 5.
2.
Toss together the olive oil, beets, and seasoning in a roasting dish. Add the Halloumi and toss again briefly.
3.
Roast for 22 - 25 minutes until the beets are glazed and the Halloumi is golden-brown.
4.
Remove from the oven and leave to cool briefly. Meanwhile, toss the salad with extra-virgin olive oil, lemon juice, and a little seasoning.
5.
Arrange on plates and top with the beets and Halloumi before serving.
