- 2 Tbsps Rice wine vinegar
- 1 Tbsp Fish sauce
- 1 Tbsp honey
- 1 clove garlic cloves (minced)
- ½ tsp Wasabi paste
- ½ cup Avocado oil
- 8 Rice paper (kept under a damp cloth)
- mint (leaves picked)
- 3 cups Bean sprout
- 2 large carrots (peeled and julienned)
- 1 medium Cucumber (seeded and cut into thin batons)

Preparation steps
1.
Whisk together the vinegar, fish sauce, honey, garlic, and wasabi paste in a small mixing bowl. Whisk in the avocado oil in a slow, steady stream until emulsified. Set to one side.
2.
Working quickly one-by-one, line the centre of each wrapper with mint leaves and top with a mixture of the beansprouts, carrots, and cucumber.
3.
Spoon a teaspoon of the dressing on top of the vegetables and bring the edges of the wrappers inwards before rolling tightly.
4.
Serve the rolls with the remaining dressing on the side.
