- 6 ozs Rice noodles
- salt
- ½ Cucumber
- 1 carrot
- 4 ozs Napa cabbage
- 2 ozs Bean sprout
- 8 leaves Iceberg lettuce
- 2 Tbsps Rice vinegar
- 1 Tbsp freshly chopped cilantro

Preparation steps
1.
Cook the rice noodles in salted water according to the package directions. Drain. Rinse and peel the cucumber, carrot and cabbage. Halve the cucumber lengthwise and remove the seeds. Cut the cucumber, carrot and cabbage into thin strips or slices. Rinse the bean sprouts and drain. Mix all the prepared ingredients with the rice vinegar and cilantro.

Rinse and spin dry the lettuce leaves. Spread the vegetables onto these leaves and roll them up.
3.
Serve with chilli dip or soy sauce to taste.
