This delicious bark is creamy and chocolatey but 100% vegan.

This bark pairs deliciously with coconut ice cream.

8 ounces Vegan Dark chocolate
½ cup white, hard Mint candy (such as Polo or Lifesavers), Crushed
Book recommendation

You can vary the toppings, for example, try crushed nuts instead of mint

Preparation steps

1.

Line a baking sheet with parchment paper and set aside. Crush candies and set aside.

In a heatproof bowl, break up the chocolate and melt in the microwave for 30-seconds. Stir and melt for additional 30-seconds, then stir again. If needed melt in additional 15-second increments until completely melted and smooth.
(NOTE: Do not melt all at once as the melting and mixing is an important step to ensure your chocolate doesn't burn)

Immediately pour evenly onto the parchment lined tray and top with the crushed candies (or any other topping of choice).

Refrigerate the tray for one hour. Remove and break into pieces to serve.
