- 2 cups all-purpose flour (for work surface)
- 1 tsp Baking powder
- 1 tsp sugar
- ½ tsp salt
- 4 Tbsps soft butter
- ½ cup plain Yogurt
- 1 egg yolk (beaten)
- 10 Tbsps Clotted cream
- 8 Tbsps Strawberry Jam
Preparation steps

Preheat the oven to 425º F / 220°C.

In a large bowl, combine the flour, baking powder, sugar, salt, butter and yogurt and knead until the dough is smooth and soft.

On a lightly floured work surface roll the dough out to a thickness of approximately 1-inch. Cut out rounds using a fluted 2-inch cookie cutter. Re-roll the scraps and cut out more rounds.
4.
Brush scones egg yolk and bake for 12 to 15 minutes. Cool on a wire rack. Cut in half and serve with clotted cream and strawberry jam.
