- 1 Tbsp Avocado oil
- 1 Tbsp green Thai curry paste
- fresh ginger (peeled and sliced)
- 1 ⅔ cups light Coconut milk
- 2 ⅔ cups shelled Prawn (deveined)
- 2 cups tenderstem Broccoli (broccolini)
- 3 cups
- cilantro (to garnish)
- salt
- freshly ground peppers

Preparation steps
1.
Heat the oil in a saucepan set over a moderate heat until hot. Add the curry paste and fry in the oil for 1 minute, whisking frequently.
2.
Add the ginger and fry for a further minute. Whisk in the coconut milk and bring the sauce to a simmer.
3.
Reduce the heat and cook for 10 minutes until slightly thickened.
4.
Meanwhile, place the prawns and broccoli in a steaming basket. Cover with a lid and steam over a half-filled saucepan of simmering water until tender; 6 - 8 minutes.
5.
When the prawns and broccoli are ready, reheat the rice if necessary. Spoon into bowls and ladle over the green curry sauce.
6.
Top with the prawns, broccoli, and coriander before serving.
