- 3.333 cups wholemeal Spelt flour
- 2 tsps salt
- 2 Tbsps Yeast
- 2 tsps Dried yeast
- 1 ½ cups lukewarm water
- 2 Tbsps flaxseed
- 1 Tbsp Sesame seeds
- honey
Preparation steps

Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7 and line a baking tray with grease-proof paper.

Mix together the flour and salt and make a well in the middle. Dissolve the yeast in some of the water and pour it into the well. Add the rest of the water and knead into a smooth dough. Knead firmly for approx. 10 minutes until it hardly sticks anymore. Adjust the consistency by adding more water or flour. Knead in the seeds.

Cover and leave to rise for 60 minutes. Re-knead, and shape into bread rolls. Place the rolls on the prepared baking tray and bake for 20 minutes. Place a bowl of boiling water in the oven as well.

Leave the rolls to cool on a wire rack and serve lukewarm with honey and butter if desired.
