- ⅓ cup olive oil
- 2 cups Sweet potato (diced)
- 1 medium onion (diced)
- 1 Tbsp fresh ginger (finely minced)
- 4 cloves garlic cloves (finely minced)
- 1 ¼ cups toasted Pine nuts
- 1 Tbsp ground Cumin
- 1 ½ tsps ground cinnamon
- 1 ½ Tbsps ground Fennel
- 1 ½ Tbsps ground cilantro
- ¾ cup fresh mint (finely chopped)
- 1 ¼ cups fresh parsley (finely chopped)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 4 boneless Pork chop
- liquid smoke (to taste)

Preparation steps
1.
Preheat oven to 375 degrees F/ 190 degrees C.

Heat olive oil in a large, oven proof skillet. Add onions and potato and sauté about 5 minutes, or until soft. Add ginger and garlic and sauté another minute until fragrant.
3.
Add pine nuts, cumin, cinnamon, fennel, coriander, mint and parsley to the skillet. Continue to cook, while stirring, until well blended, about 3 minutes. Remove from heat and set aside.

Salt and pepper both sides of the pork chops. Standing the pork on its side, take a sharp knife to slice each of the pork chops through the center, taking care not to go all the way through.
5.
Divide the reserved filling between the pork chops, stuffing generously. Place the stuffed pork on a sheet tray and baste the tops and sides of all the surfaces with liquid smoke. Bake the pork for 30 minutes or until meat is cooked to preferred doneness. Baste once or twice during baking if desired. Let stand a few minutes before serving.
