8 medium yellow onion
200 grams button Mushroom
4 Tbsps butter
400 grams Trappista cheese
salt
freshly ground peppers
200 grams Whipped cream
2 eggs
3 Tbsps breadcrumbs

Preparation steps

Peel the onions and cook in lightly salted water for about 15 minutes. Remove from pot and drain. Cut a lid from each onion and scoop out the inside with a small spoon.

Finely chop the scooped onion pieces. Trim mushrooms and cut into slices. Melt 2 tablespoons of the butter and add the chopped onions. Cook until soft and add the mushrooms. Cook briefly and season with salt and pepper. Dice half of the cheese into small pieces and mix with the onion-mushroom mixture, breadcrumbs and eggs.

Place the mixture into the scooped onions and place in a greased baking dish. Grate remaining cheese finely and stir with the creme fraiche. Season with salt and pepper. Pour cream mixture into the baking dish with the onions. Dot onions with remaining butter. Cover with aluminum foil and bake in a preheated oven at 180°C (approximately 350°F) for about 35 minutes. Serve hot.
