Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 3 large baking trays with non-stick baking paper.
2.
Beat the butter and sugar in a mixing bowl until light and fluffy. Gradually beat in the egg, strawberry extract and food colouring until blended.
3.
Sift in the dry ingredients and stir gently until combined. Stir in the buttermilk until the mixture is smooth and thick.
4.
Drop 2 tablespoons of the mixture at a time onto the baking trays, about 4 cm|2" apart and spread out a little to 7.5 cm|3" diameter rounds.

Bake for 12-15 minutes, until firm to the touch. Cool on the baking trays for 5 minutes, then place on a wire rack to cool completely.
6.
For the filling: beat the butter until soft and creamy. Sift in the icing sugar and beat until smooth. Beat in the marshmallow creme and vanilla until well blended.
7.
Spread the flat side of a cold cake with some of the filling. Place another half, flat side down, on top of the filling then press both halves together lightly.
