- 18 ozs Cherries (pitted and halved)
- 1 Tbsp Corn starch
- 1 unwaxed lemon (finely grated zest)
- ½ cup sugar (heaped)
- 2 cups all-purpose flour
- 2 tsps Baking powder
- ½ tsp salt
- ⅓ cup butter
- ½ cup cream (35% fat)
- 1 egg
- 1 tsp vanilla extract
- To finish
- powdered sugar

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a baking dish.
2.
Toss together the cherries, cornflour, lemon zest and 75g|3oz sugar. Place in the baking dish.

Combine the flour, remaining sugar, baking powder and salt in a mixing bowl. Rub in the butter until the mixture resembles breadcrumbs.
4.
Whisk together the cream, egg and vanilla. Add to the dry ingredients and mix until just combined. Arrange rounds of the mixture on top of the cherries.
5.
Bake for 40-50 minutes until the topping is golden.
6.
Sift a little icing sugar over the top.
