- 8 King prawn (ready to cook)
- 1 sprig Lemongrass
- salt
- 1 Cucumber
- 2 bunches Daikon cress (or garden cress)
- For the salad dressing
- 50 grams ginger
- 1 Tbsp honey
- Limes
- 4 Tbsps Canola oil
- 200 grams Whipped cream
- salt
- freshly ground peppers

Preparation steps
1.
Rinse prawns and pat dry. To make lemongrass skewers: Rinse, trim and halve lemongrass lengthwise, then slice diagonally into quarters. Thread prawns onto lemongrass skewers. Season with salt and place in an oiled bamboo steamer. In a wok, bring a small amount of water to a boil. Place steamer in wok, cover and steam about 5 minutes.

Peel cucumber, halve lengthwise and thinly slice crosswise.

Snip cress with scissors and mix with cucumber slices.

To make salad dressing: Puree ginger with some ginger juices, honey, lime juice, oil and sour cream. Season with salt and pepper.

To serve, divide cucumber and cress among plates, top each serving with 2 prawn skewers and drizzle with dressing.
